  1. Spread the tomato sauce on the bread. Cut the bread into strips about 2.5 cm (1 inch) wide, then cut the strips into 12 mm (1 inch) pieces. Put the bread into the bowl. Scatter the ham over the bread.
  2. Break the egg into the cup. Beat with fork until egg is bubbly on top. Add the milk, salt and pepper. Beat until well mixed. Pour evenly over the ham. Do not stir. Microwave, covered, on high (100%) for 2 to 3 minutes until the centre of the egg mixture is set.
  3. Sprinkle with cheese. Microwave on high (100%) for another 10 to 15 seconds until the cheese is melted.

Tips

Try salsa or barbecue sauce instead of tomato sauce. Leftover cooked sausage or dried bacon bits (or fried, diced bacon) work in place of ham.

Make this the night before for a fast breakfast! Follow the recipe, putting everything but the cheese in the bowl. Cover with plastic wrap. Refrigerate overnight. In the morning, remove the plastic wrap, and cook as directed. Don't forget the cheese!
